EASY Summer Recipe: Grilled Fish with Peach and Tomato Salad

This recipe is from Mark Bittman's book Kitchen Express which my friend Julie told me about -- she's a great cook. I am a good cook who doesn't like to fuss and this recipe fits the bill.
First of all, use any fish that is fresh and firm.
Then, brush the fish with olive oil and season with salt and pepper.
Slice an equal number of tomatoes and peaches and put them in a serving dish with diced red onion, chopped cilantro, olive oil, lime juice, salt, and pepper.
Grill the fish, turning once, until just done.
Serve with the salad and a slice of lemon or lime.
Adaptation that my friend Julie and I have done and it's delicious...serve the tomato and peach salad as a salsa on top of the fish.
That's it!
Serve with rice, a baguette, or a fresh ear of corn! So easy and
delicious! And when we're running low on energy, inspiration, time, or whatever, recipes like this are perfect!
*It occurs to me that this would also be delicious using fresh chicken breasts (maybe pound them first?) or chicken tenders!
